Sous Vide Hard Boiled Eggs

Easter eggs! Decorating and searching for these colorful eggs make up most of my favorite childhood memories of Easter. Sometimes I wanted to get creative with the eggs, going for patterns, or adding stickers; sometimes I just wanted the perfect shade of yellow. No matter how I chose to decorate them, sitting around the table with the family while I colored them was always full of laughter and fun.

It is important to me to help my children create just as many good memories. Before I pull out a table protector and all that egg dye, first I need to boil the eggs. It seemed like another perfect opportunity to bust out my SV1 sous vide cooker.

I suppose calling these eggs "sous vide" is a little misleading because they are not cooked under vacuum. Do not try to vacuum seal your uncooked eggs. The temperature control of the sous vide water bath, makes sure my eggs are cooked to perfection, even if I accidentally leave them in a couple of minutes too long.

Here's how I made mine:

1. Preheat SV1 to 167°F

2. Place the eggs (I made one dozen) in the water bath, very gently set them on the bottom

3. Cook for 1-2 hours

4. Place in water bath to cool

6. Place in fridge until ready to color

I don't have any trouble peeling my eggs, though I have heard it may be helpful to do a quick (2-3min) optional pre-boil before adding the eggs to the water bath.*
