- Baby back ribs

- Melinda's hot sauce or W Sauce (as a binder)

- Blazing Stars Scorpion Rub or Notorious PIG Hypnotizer rub

- RumRunners Capt Choice seasoning

- Honey

- Butcher paper or foil

Instructions:

  1. Preheat your Cotton Gin Smoker Tbird to a pit temperature of 275°F (135°C).
  2. Prepare the baby back ribs by removing the membrane from the bone side of the ribs for better flavor absorption.
  3. Use Melinda's hot sauce or W Sauce as a binder to help the rub adhere to the ribs.
  4. Generously apply either Blazing Stars Scorpion Rub or Notorious PIG Hypnotizer rub to the ribs, ensuring they are evenly coated.
  5. Layer the RumRunners Capt Choice seasoning on top of the initial rub layer, adding an extra depth of flavor.
  6. Hang the ribs in the smoker for one hour, allowing the flavors to penetrate the meat.
  7. After the hour has passed, remove the ribs from the smoker and apply a drizzle of honey on top.
  8. Wrap the ribs in butcher paper or foil tightly to create a seal, ensuring moisture retention during the cooking process.
  9. Place the wrapped ribs back in the smoker and continue cooking for an additional 30-45 minutes.
  10. After the specified cook time, carefully unwrap the ribs, being cautious of the hot steam inside the wrapping.
  11. Return the unwrapped ribs to the smoker for a final 30-45 minutes, allowing the exterior to develop a nice bark.
  12. Once the total cook time of 2.5-3 hours has elapsed, remove the ribs from the smoker. Make sure the internal temperature is at least the recommended 145°F (63°C).
  13. Let the ribs rest for a few minutes before slicing and serving.
