Scary Good Pumpkin Soup Recipe
Ingredients
2 Tablespoons Unsalted Butter
1 Tablespoon Olive Oil
2 Large Yellow Onions
1 Large Granny Smith Apple
2 Large Garlic Cloves
2 Cups Chicken Stock
1 1/2 Pounds Pumpkin Puree
2 Cups Heavy Whipping Cream
2 Teaspoons Salt
1/2 Teaspoon Black Pepper
Directions
Heat the butter and oil in a heavy bottomed stockpot.
Add the onions, apples and garlic and cook over medium low heat for about 10 minutes, or until the onions are translucent and the apples are soft.
Add the pumpkin puree, chicken stock, salt and pepper. Cover and simmer over medium-low heat for about 20-30 minutes, or until mixture has thickened.
Process the mixture in a food processor, until it is a smooth puree.
Return the puree to the pot, add heavy whipping cream and heat slowly.
Taste soup and adjust seasoning with salt and pepper if necessary.
Garnish with roasted pumpkin seeds.
Serve immediately.
