Hot Chorizo Cheese Dip with Jalapeños Recipe
Ingredients
1 Tomato, Small, Peeled, Seed and Chopped
1 Large Jalapeño Chile, Ribbed, Seeded, and Finely Chopped
2 Tablespoons Oregano
Salt Kosher
8 Ounces Velveeta Cheese
8 Ounces Monteray Jack Cheese, Grated
1 4-Ounce Link Fresh Mexican Chorizo or Hot Italian Sausage, Casing Removed
1/2 Cup Red Onion, Minced
1/2 Cup Beer
Tortilla Chips
Directions
Mix tomato, jalapeños, and oregano in a small bowl.
Season with salt to taste and let sit for 30 minutes to blend flavors
In a medium saucepan over medium heat cook the chorizo, breaking up the meat with a wooden spoon, until it begins to render, about 1-2 minutes.
Add the minced onion and continue cooking until sausage is cooked and onion is soft and translucent, about 5-7 minutes.
Transfer chorizo mixture to a small bowl and reserve,return saucepan to heat.
Slowly add the beer to the saucepan bring to a simmer while occasionally stirring and scraping up any browned bits into the beer
Whisking constantly, add cheese mixture a handful at a time, allowing it to become blended and smooth between additions.
Stir in chorizo mixture.
Serve in the skillet or heat proof crock with tortilla chips, for dipping!
